Ingredients
  

  • ½ cup butter
  • 2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups shredded sweetened coconut

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. Brown butter in a saucepan over medium-high heat, swirling continuously until amber in color. Remove from heat.
  3. Stir brown sugar into the butter. Mix in eggs and vanilla.
  4. Add flour, baking powder, and salt to the wet ingredients. Stir until combined.
  5. Fold in shredded coconut.
  6. Pour batter into the baking dish and bake for 40–45 minutes, covering with foil during the last 10 minutes.
  7. Cool completely before slicing and serving.

Notes

  • Use unsweetened coconut if preferred, but adjust sugar accordingly.
  • For an extra twist, add chocolate chips or chopped nuts.
