Method
- Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
- Brown butter in a saucepan over medium-high heat, swirling continuously until amber in color. Remove from heat.
- Stir brown sugar into the butter. Mix in eggs and vanilla.
- Add flour, baking powder, and salt to the wet ingredients. Stir until combined.
- Fold in shredded coconut.
- Pour batter into the baking dish and bake for 40–45 minutes, covering with foil during the last 10 minutes.
- Cool completely before slicing and serving.
Notes
- Use unsweetened coconut if preferred, but adjust sugar accordingly.
- For an extra twist, add chocolate chips or chopped nuts.
